Tomato soup

It's a lazy Sunday, the first of the year.The festivities are well and truly over but our routine hasn't quite cranked up to full speed yet.
When I was surfing the net yesterday, up popped this recipe for home made tomato soup and with time to spare this afternoon, I decided to give it a try. It turned out to be THE most delicious tomato soup I have ever tasted! You can find the recipe here:


I roasted 3lb plum tomatoes on a deep baking tray, having first cut them in half and drizzled them with olive oil.  I set my fan oven to 180 and roasted them for 45 minutes.
Meanwhile, I gently fried two large finely chopped onions with 6 fat cloves of crushed garlic and a tablespoon of olive oil until soft. I then added 2 tins of tomatoes (400g each) , a dessert sized spoonful of fresh thyme leaves, 2 handfulls of fresh basil leaves (about 1 oz) and half a pint of vegetable stock (made from Swiss Bouillon powder). Then, I tipped my roasted tomatoes in along with all of the juices and scrapings from the baking tray. I added half of a dried crushed up chilli and salt and pepper.
The whole lot simmered for 40 minutes and the smell in the kitchen was divine! 
I liquidised the soup in two batches, adjusted the seasoning and served it with a swirl of sour cream. 
A very simple recipe, but a sumptuously delicious and healthy result!
